Burong Isda is a typical Kapampangan Delicacy made from salted fish and fermented rice that has been left, fermenting away for a week. When cooked, it goes excellent with steamed rice, fried fish and steamed or Broiled veggies such as eggplants, okra sigarilyas or string beans. even with fresh young mustard it goes as well also with grilled fish such as Tilapia, Bangus, Hito, Dalag and others.
It can be made from a wide variety of fishes such as gurami, mudfish (dalag), carp, catfish (hito), tilapia and even milkfish and shrimps (balao-balao).
No one really knows for sure exactly where buro originated but Wikipedia,claims that it’s in Candaba, Pampanga, where this humble condiment first sprung up.
Regardless of where it came from, for us LaPazenio this condiments is one or the most favorate condiments or can we say dish, wherever we are, we always missed to have this in our dining table. and many of our Kababayan know how to prepared the burong isda with a different variation.

We know that Philippines is celebrating many festivals all year round. Every region, provinces and Cities has different kinds of festivities, events and schedule. Festival is characterized by the community to express the warm welcome of the harvest and products, express religious fervor, Promote or commemorate a historic event. It is among the ties that blind, showing and strengthening the shared history, values, and experiences of a specific group of people.
Every now and then a new festival has been introduced in many different parts of the Phillippines and its time for us Lapazenio to have one.
Please Help Blue Ladies of LaPaz, give them some Idea, feedback and suggestion how can we celebrate this event.
